Carrot Cake

4 eggs
1 1/4 cups vegetable oil
2 cups sugar
1/2 cup brown sugar
1 T. vanilla extract
2 tsp. black walnut extract
1/4 cup butter (softened)
2 1/4 cup flour
2 tsp. baking soda
2 tsp. baking powder
1/2 tsp. salt
1 T. cinnamon
1 tsp. ground cloves
3 cups carrots (peeled & grated)
1 cup applesauce
1 cup walnuts (chopped) [optional]

Directions:
1) Preheat oven to 350 degrees. Grease and flour a 9x13 inch pan.
2) In a large bowl, beat together the eggs, oil, both sugars, and vanilla & walnut extracts. Mix in the butter, flour, baking soda, baking powder, salt, cinnamon, and ground cloves. Next, mix in the carrots, applesauce and walnuts. Pour into the greased & floured pan.
3) Bake in preheated oven for 40-50 minutes or until a toothpick, inserted into the center of the
cake, comes out clean. Cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
